docs: finish iac-pipeline.md diagram fix (provisioning stage role count)

Completes the fix started in e74e049 - the Ansible Stages diagram's
Provisioning box now reads '2 roles today' instead of the stale
'1 role today, one host'. Provenance bumped to today's verify pass.
